#003366\">leaves of 1 cauliflower ( chopped fine)<\/span><br \/>\n<span style=\"color: #003366\">1 medium potato (peeled and chopped into 8 pieces)<\/span><br \/>\n<span style=\"color: #003366\">1 teaspoonful of coriander powder<\/span><br \/>\n<span style=\"color: #003366\">1\/4 teaspoonful of chopped chillies<\/span><br \/>\n<span style=\"color: #003366\">1\/4 teaspoonful of turmeric<\/span><br \/>\n<span style=\"color: #003366\">1 teaspoon of amchoor<\/span><br \/>\n<span style=\"color: #003366\">1\/2 teaspoon of salt<\/span><\/p>\n<p><span style=\"color: #800000\">Bahhgaar (Whole spices are browned in hot oil or ghee before any other ingredients are added.)<\/span><\/p>\n<p><span style=\"color: #003366\">2 tablespoons of oil<\/span><br \/>\n<span style=\"color: #003366\">1\/2 teaspoon of cumin seeds<\/span><br \/>\n<span style=\"color: #003366\">1\/2 teaspoon of asafoetida<\/span><\/p>\n<p><span style=\"color: #800000\">Method<\/span><br \/>\n<span style=\"color: #003366\">Heat oil in a wok.\u00a0 Add cumin seeds and asafoetida.\u00a0 When browned, add potato pieces, leaves, and all the other ingredients (except amchoor).<\/span><\/p>\n<p><span style=\"color: #003366\">Stir well, cover, and cook on low heat for 7 &#8211; 10 minutes, add amchoor and cook further till the vegetable is dry.<\/span><\/p>\n<p><em>India has an age-old tradition of maximizing every bit of any object &#8211; be it cauliflower leaves or rubber tyres &#8211; &#8216;waste not want not&#8217; &#8211; a recycling policy at its best.\u00a0 In North India, the leaves of cauliflower invariably get used up as an extra vegetable &#8211; making a very tasty and nutritious dish indeed.\u00a0 And some of us, in fact, like it very much with our parathas.\u00a0 \u00a0 The cauliflower in the UK, in the early 70s, had its leaves trimmed off before being sold.\u00a0 A Punjabi friend of mine in London, who loved this dish to no end, resorted to going behind the market stalls and, to the amazement of the stall holders, gathered up the thrown leaves.\u00a0 The stallholders probably thought of her as a &#8216;poverty-stricken Indian&#8217;.\u00a0<\/em><\/p>\n<p><em> I also use these leaves in soups or other such dishes.<\/em><\/p>\n<p><span style=\"color: #800000\"><a
