style=\"color: #333333\">300ml natural yogurt<\/span><br \/>\n<span style=\"color: #333333\">1 tbs fresh root ginger<\/span><br \/>\n<span style=\"color: #333333\">2 large onions, grated<\/span><br \/>\n<span style=\"color: #333333\">4 garlic cloves, crushed<\/span><br \/>\n<span style=\"color: #333333\">1 tsp turmeric<\/span><br \/>\n<span style=\"color: #333333\">1 tbs curry powder<br \/>\n<\/span><span style=\"color: #333333\">2 tbs butter<\/span><br \/>\n<span style=\"color: #333333\">2 onions, sliced<\/span><br \/>\n<span style=\"color: #333333\">225gms basmati rice<\/span><br \/>\n<span style=\"color: #333333\">chopped coriander, to garnish<\/span><\/div>\n<p><span style=\"color: #800000\"><strong>METHOD<\/strong><\/span><br \/>\n<span style=\"color: #333333\"><strong>1.\u00a0<\/strong> Cook the potato cubes, carrots and okra in a pan of boiling salted water for 7-8 minutes.\u00a0 Drain well and place in a large bowl.\u00a0 Mix with the celery, mushrooms and aubergine.<\/span><\/p>\n<p><span style=\"color: #333333\"><strong>2.<\/strong>\u00a0 Mix the natural yogurt, ginger, grated onions, garlic, turmeric and curry powder and spoon over the vegetables.\u00a0 Leave to marinate for at least 2 hours.<\/span><\/p>\n<p><span style=\"color: #333333\"><strong>3.<\/strong>\u00a0 Heat the butter in a frying pan and cook the sliced onions for 5-6 minutes until golden brown.\u00a0 Remove a few onions from the pan and reserve for garnishing.<\/span><\/p>\n<p><span style=\"color: #333333\"><strong>4.<\/strong>\u00a0 Cook the rice in a pan of boiling water for 7 minutes.\u00a0 Drain well.<\/span><\/p>\n<p><span style=\"color: #333333\"><strong>5.<\/strong>\u00a0 Add the marinated vegetables to the onions and cook for 10 minutes.<\/span><\/p>\n<p><span style=\"color: #333333\"><strong>6.<\/strong>\u00a0 Put half of the rice in a 2-litre casserole dish.\u00a0 Spoon the vegetables on top and cover them with the remaining rice.\u00a0 Cover and cook in a preheated oven 190\u00b0C\/425\u00b0F\/Gas Mark 7, for 20-25 minutes or until the rice is just tender.<\/span><\/p>\n<p><span style=\"color: #333333\"><strong>7.<\/strong>\u00a0 Spoon the biryani on to a serving plate, garnish with the reserved onions and chopped coriander and serve hot.<\/span><\/p>\n<p style=\"text-align:
